Amy’s Cake

Ingredients:

3 ounces of oats
8 ounces of spelt flour
2 ounces of all purpose flour
1 teaspoon of baking soda
2 ounces of egg replacer
4 ounces apple-pear sauce – unsweetened
3 ounces of agave
1 teaspoon of vanilla extract
1 cup of blueberries
3 ounces of dark chocolate chips
4 ounces of dried cherries
2 bananas – mashed
4 ounces of chopped walnuts
2 teaspoons of cinnamon
4 ounces of Greek yogurt
2 ounces of soy milk
Optional: no fat whipping cream or tofu vanilla icing


Directions: To make Amy’s Cake you will need a round baking pan treated with cooking spray and to preheat the oven to 325 degrees. Also get out two bowls – one large and one medium. Into the large bowl goes the oats, cinnamon, spelt flour, all purpose flour, and baking soda – mix well. Then in the other bowl mix together the apple-pear sauce, mashed banana, Greek yogurt, soy milk, egg replacer, agave, and vanilla extract. Whisk them together and then pour the batter into the dry ingredients, and mix them together.

At that point fold in the blueberries, of dark chocolate chips, dried cherries, and walnuts into the batter. Mix well, and pour into the baking pan, which goes into the oven for about an hour or until you can slide a toothpick in and have it come out clean. Once it’s done let it cool for 10 minutes. After its cooked down slather on the tofu icing, or you can slice and top with the no fat whipping cream, both of which keep you on track if you’re doing cardio, lifting weighs or performing lower abdominal workouts to slim your waistline.

Additional Information: Amy’s Cake makes just about 8 slices, each of which contains 210 calories, 10 grams of fiber and 8 grams of protein. This dessert also contains vitamins C, D, E and A as well as omega fatty acids due to the inclusion of walnuts.
