Italian Chicken Surprise

Ingredients:

1 pound of skinless boneless chicken breast
2 shallots chopped
4 ounces of chopped fennel
6 ounce of sliced mushrooms
4 ounces of sliced carrots
6 ounces of chopped broccoli florets
3 cloves of garlic
2 tablespoons of avocado oil
White pepper to taste – black pepper will do in a pinch
1 ounce of veggie stock
1 cup of spinach - chopped
Sea salt to taste
1/8th teaspoon of onion powder
1/8th of a teaspoon of agave nectar
½ teaspoon of oregano
a pinch of thyme
¼ teaspoons basil
a pinch of celery salt
2 ounces of balsamic vinegar
2 teaspoons of red wine
4 ounces of avocado or olive oil
½ teaspoon of parsley
1 ounce of parmesan cheese


Directions: Pasta is a much loved dinnertime treat in our house, but these days when were doing some of the best abdominal workouts we’ve ever done, and actually seeing results, were serving less pasta. But with our Italian Chicken Surprise you barely notice that. Let’s get to it – pull out a skillet and add the avocado oil, and 2 cloves of garlic. Let it warm up, and then add in the chicken. Cook the chicken for a few minutes on each side until it’s browned and cooked all the way through.

While that’s happening get out a small bowl and add in the onion powder, agave nectar, oregano, thyme, basil, Celery salt, balsamic vinegar, red wine, avocado oil and parsley. Whisk them together. This is a very basic Italian dressing, but if you want to you can use a low fat store brought version too.

Once the meats cooked add in rest of the veggies, except the spinach, stir frying them as you go. Once they are just about done add in the half of the dressing, veggie stock and spinach, cover the pan, and let the spinach wilt. This should take a minute or two, and then the chicken can go in too. Let it simmer until the veggie stock is almost totally gone. Plate the chicken and veggies, and top with freshly ground pepper and some parmesan cheese.

Additional Information: Italian Chicken Surprise is a great meat and veggie meal. You get upward of 20 grams of protein and 18 grams of fiber, while getting just 5 grams of fat, of which just 1 gram is saturated fat. This entire meal also contains just 256 calories.
