Presto Pesto Stew

Ingredients:

1 cup of carrots
1 cup of diced potatoes
3 yams – cut into bit sized pieces
3 potatoes – cut into bite sized pieces
1 cup of mushrooms
1 cup of diced yellow squash
1 cup of Brussels sprouts - halved
1 cup of fennel – chopped
1 leek – chopped
1 cup of green beans
6 ounces of basil leaves – fresh
6 ounces of lemon basil leaves - fresh
5 ounces of parmesan cheese - grated
1 cup of veggie stock
1 cup of water
Salt and pepper to taste
½ ounce of chopped walnuts
2 cups of fava beans
3 cloves of garlic
2 ounces of avocado oil


Directions: Our Presto Pesto Stew is a hearty dinnertime soup. It’s actually a very simple soup to make, but it sure doesn’t taste like it. To make it get out all the veggies, and a large soup pot. Add in 1 cup of veggie stock and 1 cup of water, let them heat up, and then begin adding in the veggies. The hardest ones like the potatoes, carrots, Brussels sprouts and beans go in first. Let them cook for 15 minutes, and then add in the spinach, mushrooms, leeks, fennel, and squash. Let it cook until all the veggies are tender – adding in some sea salt and pepper as you go.

While that’s happening get out a blender, and toss in the parmesan cheese, avocado oil, garlic, basil, and walnut bits. Cover the blender, and turn it on and let it combine and chop all the ingredients. When it’s done put it to the side. Once the veggies are tender, add in the basil, stir, and serve. What’s really wonderful about this soup is that the pesto you created, which you can use on pasta if you like, gives you all the flavor you need to make this soup memorable.

Additional Information: Presto Pesto Stew contains just 175 calories, while delivering 17 grams of hunger fighting fiber. Sometimes we add in some chicken to give it a protein punch. That’s really easy to do, add the chicken into the stock along with the first surge of veggies, and let it cook until the chicken is no longer pink. This soup is hearty and great when you’re trying to keep calories down when you’re lifting weights, running or even doing great abdominal workouts to trim your waistline and get in shape.
