2 thick cut pork chop, with a butterfly cut down the center
5 TB of goat cheese
1 TB of scallions, chopped
1 TB of fresh basil, chopped
2 TB of extra virgin olive oil
First, set the oven to 400 degrees. Get out a pan to place your pork chops in. Brush the olive oil over the pork chops and place them in the pan. Get out a small bowl and mix together the goat cheese, scallions and fresh basil. Grab the pork chops and pull open the butterfly cut. Divide the goat cheese filling in half and spoon the filling into the pork chop. Press down to get as much filling in as possible. Once both pork chops are stuffed place them in the pan butterfly cut stuffing up.
Cook for about 35 to 40 minutes, or until the pork is completely cooked through.
Makes two servings.
Serve with a fresh side salad so that you do not undo your best abdominal workouts from the day.
